Like our sister restaurant Settebello Pizzeria Napoletana, the food we serve at Bocata is handmade from the highest-quality ingredients. We make our own brines and rubs, roast and slice or pull our own cooked meats, and make our own sauces and condiments right here. Why go to the trouble of making your own fennel rub or roasting your own turkey? It’s pretty simple…we think it tastes better!
A little bit about the food
Our Bread is made with imported Caputo “00” flour. After a long bulk rise, the dough is formed into individual balls and allowed to rise a second time before being carefully tossed and fired in our brick oven.
The Turkey spends a night in an apple-cider brine before getting a fennel-spice rub and is then slowly roasted to perfection.
Our popular Drunken Chicken marinates in a brine based on Red Rock Brewery’s award-winning Hefeweisen.
The meatballs are made from scratch using ground pork & beef as well as our own breadcrumbs and pecorino romano cheese.
We make our Lamb from a whole leg of lamb that is slow-roasted after a night of marinating in garlic, rosemary, lemon juice and olive oil.
The Porchetta is our version of the traditional Italian roasted pork. We use a pork shoulder rubbed with toasted fennel and roasted for several hours with onions, carrots and celery.
Our Cuban Pork is rubbed with cumin and orange zest before a long roast with citrus and sherry vinegar.
The Roasted tomatoes are fresh roma’s that roast for a couple of hours in the oven with balsamic vinegar and olive oil.
All of our Sauces and condiments are made in-house, from the pickled red onions to the crispy shallots.
